Mary Berry’s Apple and Cinnamon Cake

I’ve been in Germany with Rock Star for the past week. I had such an amazing time. I got to dig out my high school German, go on a fairly massive drive on an autobahn and eat a huge amount of pastry. I’ll be blogging about the trip a bit more in the next couple of days but I wanted to quickly post about my latest baking challenge. I stumbled upon the site Weekly Bake Off  and decided to take up the challenge.

The challenge for this week was to make Mary Berry’s  Apple and Cinnamon Cake. I had all the ingredients in the cupboard except for the apples, so I popped up to the shops to buy them this morning. I wasn’t really sure of what kind of apples to buy but ended up chatting to a lovely old lady who not only advised me on what apples to buy but also  gave me a mini seminar on how to bake apples in the microwave. Unfortunately we don’t currently have a microwave but it was very kind of her none the less.

The recipe  for the Apple and Cinnamon Cake was really easy and the cake itself was great. I personally am more into chocolate in my cakes but this was still a nice recipe. I’m also thinking that because it has fruit in it, it technically is a health food. So I can have more than one slice can’t I?

Anyway if you’re interested in baking it yourself the recipe is in  “Mary Berry’s 100 Cakes and Bakes” on page 36 (Have I mentioned how much I love Mary Berry? And what an awesome name for a baker. I’m thinking I might need to change my name to something more bakelicious – Rock star suggested Allee Berry). You can buy the recipe book it here and at £ 3.98 with free world wide delivery it’s a great investment.

I’m off to eat another piece of cake and contemplate what I might bake this week. So many recipes, so few hours in the week.
